Guatemala San Carlos
All orders placed by 12am (midnight) PST will be roasted and shipped the following business day.
San Carlos Antigua is primarily composed of three farms located in Antigua. Villa Estela (10ha), San Carlos (25ha), and San Ignacio (15ha) are all within a 15 minute walk from the Central Park of Antigua. Each farm yields about 2 to 3 containers of coffee, which are then combined into the same "blend", processed at TG Lab's mill called Nueva Esperanza. These farms have a long family history dating back to the 1800's when it was started by don Carlos Durán. These farms are now owned by his daughters Ana Maria and Estela Durán.
Villa Estela is part of Antigua, between 5th and 6th Street and Calle del Rastro. These farms are cared for by Jorge Alberto Zamora (pictured below), who was born in the farm and has been working there for 50 years. His father was the administrator before him for 65 years between 1920 and 1985.
For the past 70 to 80 years, the main varietal grown on each farm has been Borbón. The rest is divided among 40 year old Catuaí and Caturra. Trees are kept in a high shade environment and treated like a forest. Shade is shared between gravilea and orange trees.
Sweet, milky body with a juicy, complex acidity and notes of cherry, chocolate, citrus, cherry, lime, butterscotch, marzipan, honey, fresh strawberry, apple, tropical fruit, and bergamot.
